Thank you Josephine for so much information about lemons. Some really helpful tips. I tried the rolling thing before juicing a lemon last night and it worked a treat. Thank you again.

Microwave now thats new to me but will try it. Do they explode if you leave them too long?
PS - Every green grocer should model themselves on Jack Lums know it well.

Knock on your neighbours door and ask politely. Their tree has prolific harvest :) And everyone knows that the best lemons come from a domestic tree, are soft and juicy, minus the pips. Short of that, try to buy the unwaxed lemons at Jack Lums in Remuera, or any of our Farmers Markets [ La Cigale, Parnell blind institute, Avondale etc ] and microwave in short bursts or 7-10 seconds. Put some weight on it, and roll it around on the bench.....guarantees maximum juice, and unwaxed zest. Bonus :) As an afterthought - domestic tree lemons tend to be a little sweeter than the imported, unripe rubbish we buy at supermarkets, so work on adding only 1/2 to 3/4 of sugar required for recipe. Hope this helps.

What and where are the best lemons in NZ as the supermarket selection is woeful at best, I need juice from them.
