I believe that thickened cream is not double cream, I have been told equal quantities of thickened cream and mascapone will do the trick.

I thought Double Cream was the thickened cream that you buy? I have used it in a lot of recipes that asked for Double Cream and it did the trick. Not 100% sure if it is correct though.

You have a challenge! Our red top cream is pouring cream approx 40% butterfat, double cream is approx 45%+ butterfat. I haven't seen any but it maybe out there.
I believe pouring cream with the addition of mascapone may do the trick, you may have to experiment a little.
