Easy lemon and orange zesting
I have discovered that if you peel an orange in exactly the same way you'd peel a potato, making sure you get none of the pith, you can then put this, with half a cup of water, into a blender or kitchen processor and make it into the finest particles. You then put it through a fine sieve to get rid of the water and you have zest without skinned knuckles on the grater. The whole process takes 2 minutes - tops.
This sort of zest can make wonderful lemon or orange cakes and I add the not-quite-as-pulverised orange peel to the juice from that orange and simmer until the juice is reduced by half - then tip in a jar of cheap marmalade and simmer, stirring for about 10 minutes before putting it back in the jar. It creates gourmet-style marmalade with very little fuss.
