Gorgeous golden apricots are one of the first fruits that usher in summer. With dried apricots, that summery flavouris made available through all seasons. Interestingly, the dried version offers more health benefits as the drying process concentrates the fruit’s levels of beta-carotene, fibre, potassium and iron. While the fibre content is good for the digestive system, the high beta-carotene content of apricots makes them important heart health foods that also help promote good vision. Moreover, apricots boast high levels of vitamin A, a powerful antioxidant that quenches free-radical damage to cells and tissues and may help prevent prostate cancer in men. However, when it comes to dried fruits, looks can be deceiving. The nice bright colour of commercially dried fruits is the result of sulphur-treatment. Organic dried apricots are brownish-orange in colour, but they are suitable even for asthma sufferers.
