Flourless vegetable tart

Ingredients

3 eggs
1 c milk
1/2 a medium leek, finely sliced
2 TB fine polenta (or flour)
1 sprig parsley, chopped
1 floret broccoli, finely chopped
2 small silverbeet or spinach leaves, finely chopped
2 TB grated parmesan (or other) cheese

Method

Preheat over to 170. Grease a deep pie dish.

Microwave the leek on high for 1 minute.

Whisk eggs thoroughly, add the milk and whisk again.
Stir in polenta, parsley, broccoli and silverbeet/spinach.
Season.

Spread the leeks over the base of the dish and pour over the egg mixture. Sprinkle on the parmesan and bake 30 mins till risen and golden and a knife inserted in the middle comes out clean.
