"Go Fish" by Al Brown

‘I like to keep things as simple as possible. Cooking seafood to me is about cooking it correctly, showing off its natural and individual attributes.’ – Al Brown

More than just a cook book Go Fish is Al Brown’s homage to fish. It is about the joy of
fishing, respecting the catch, our oceans and enjoying the best NZ has to offer from catch to cooking.

Al Brown has loved fishing since he was young, and he still loves nothing better than fishing or gathering seafood with his friends and family. In Go Fish Al combines his
two great passions — cooking and fishing. Delivered with uncomplicated excellence, Al brings us more than 90 exceptional fish and shellfish recipes.

Some of these recipes are very simple, and they are all approachable and cookable. They underscore Al’s philosophy that good food is about freshness of produce — and then cooking it and seasoning it correctly. It’s crucial that the flavours work well together, that the components are all in harmony and that it’s all served generously.

You don’t need a flash kitchen to cook these recipes; all you need is a good, sharp knife. All the recipes were prepared in a little half oven with a two ring burner, in Al’s old ‘new’ house in Lyall Bay. The kitchen is at least 50 years old, with a tiny Formica bench, lots of small cupboards and drawers that stick all the time, no dishwasher, an old meat safe as a pantry and, the crowning glory, an ancient Atlas Milford electric range.’ Says Al.

Stunningly photographed by Kieran Scott, Go Fish is the must-have cookbook for every New Zealand household. It takes us back to the simple days when a great meal could be had simply by casting your line from the dinghy.

Released: 9 October 2009

It’s about getting back to the fundamentals of life — of enjoying the environment around us and making the most of what we have. There is information on where to buy, how to catch and how to fillet and prepare the catch in simple, clear steps. It gives information on NZ fisheries and responsible fishing practices, promotes eating different types of fish and provides alternative fish to catch in NZ and overseas. And it even has a list of what to keep stocked at the bach. Beautifully designed the jacket opens out to reveal a guide to kiwi fish — much like the old fish and chip shop charts. A

l Brown is the acclaimed Wellington chef and owner of Logan Brown — one of Wellington’s top restaurants. He’s also one of the stars of TV show ‘Hunger for the Wild’ and author of the successful cookbook of the same name, which has sold over 14,000 copies.

‘We must be proactive and keep our oceans and sea environment front of mind. This is not just regarding the state of our fishery, but caring for our beaches, sand dunes,
marine mammals, aquatic birds and everything else that affects all aspects of our coastal environment.’ – Al Brown
