Interview with Genevieve Knights - The Cookbook Scones!


Scones is the first in a series of well priced baking books aimed at the keen home cook. Each book focuses on a classic recipe that has a straight forward technique, yet requires some tricks for the best result.

Scones are ancient, traditional and well loved quick bread that has frustrated many people over the years. A number of things can go wrong when making scones, but all issues can be resolved with a few minutes by reading the “scone secrets” chapter. After you have the technique sorted, there are 50 inspiring and contemporary recipes to try.

What kind of food interests me? All kinds! I love that I can work on recipes for home cooks one day, cook in a busy restaurant the next and cater a high class function the day after that. I find myself being more interested these days in how basic products are made (for example simple cheeses) as opposed to the latest expensive food trend only a chef can gain access to.

My point of difference as a food writer is that I use easy-to-source ingredients to create simple, tasty no fuss dishes. I don’t see any point in writing recipes with ingredients most readers can’t buy or have to go out of their way to get. The goal is to inspire readers to try my recipes and not just look at the pictures. My food photographs feature simple props and a recipe home cooks can easily reproduce without intimidation.

I decided cooking was going to be my vocation at around the age of 13 and on leaving school, vigorously pursued a career as a chef. My cooking background stretches back 20 years working in the top professional kitchens of Auckland. I have been writing and photographing food for 7 years and look forward to continuing the journey of learning about food myself while teaching others the joy of how to cook.
